Method

In a small bowl, mash avocado with lime juice and a pinch of salt. Place the wrap in a dry non-stick pan, sprinkle half the cheese over one half, top with mashed avocado, diced tomato, and coriander, then the remaining cheese. Fold the empty half over, cook for 3 minutes per side until golden and the cheese is melted, then slice and serve.
