Method

Cook noodles as per packet directions. Meanwhile, heat oil in a pan and stir-fry the crumbled tofu and mushrooms for 5-7 minutes until golden. In a small bowl, mix chilli bean paste, peanut butter, and soy sauce with 4 tablespoons of hot water to create a sauce. Drain the noodles, toss with the sauce, and top with the tofu and mushroom mixture to serve.
