Method

In a small bowl, combine black beans, corn, red onion, jalapeño (if using), and coriander. Place the wrap in a dry non-stick pan, sprinkle half the cheese over one half, top with the bean and corn salsa, then the remaining cheese. Fold the empty half over, cook for 3-4 minutes per side until golden and the cheese is melted, then slice and serve.
