Method

Preheat oven to 170°C and grease/line a loaf tin. In a large bowl, mash bananas, then whisk in egg, milk, and olive oil. In a separate bowl, combine wholemeal flour, caster sugar, and baking soda. Add the dry ingredients to the wet mixture, mixing until just combined. Gently fold in the blueberries. Pour batter into the prepared loaf tin and bake for 50-60 minutes, or until a skewer inserted into the centre comes out clean. Let cool before slicing.
